• 4 cups kale or mixed winter greens
• 1 large sweet potato, diced
• 1 orange or blood orange
• 1/3 cup pomegranate seeds
• 1/4 cup toasted nuts
• 1/4 cup feta or goat cheese
• 3 tbsp olive oil
• 1 tbsp apple cider vinegar
• 1 tsp Dijon mustard
• 1 tsp maple syrup
• Salt and pepper
Roast diced sweet potatoes at 425°F (220°C) for 20–25 minutes.
Massage kale with a little oil.
Slice citrus.
Whisk dressing ingredients.
Combine all ingredients in a large bowl.
Toss with dressing and serve.
