Velvety Italian Sausage Parmesan Soup: A Cozy Comfort Meal

  • 1 lb Italian sausage, removed from casing

  • 1 onion, chopped

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 garlic cloves, minced

  • 4 cups chicken broth

  • 1 cup heavy cream

  • ¾ cup freshly grated Parmesan

  • 1 tsp dried thyme

  • 2 tbsp fresh parsley, chopped

  • Salt and pepper, to taste

  • 1 tbsp olive oil

Instructions

  • Brown sausage in olive oil, breaking into small pieces.

  • Add vegetables and garlic; sauté until tender.

  • Pour in chicken broth and thyme; simmer 15 minutes.

  • Stir in cream and Parmesan until melted.

  • Finish with fresh parsley; season with salt and pepper. Serve hot.
