1 lb Italian sausage, removed from casing
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
4 cups chicken broth
1 cup heavy cream
¾ cup freshly grated Parmesan
1 tsp dried thyme
2 tbsp fresh parsley, chopped
Salt and pepper, to taste
1 tbsp olive oil
Brown sausage in olive oil, breaking into small pieces.
Add vegetables and garlic; sauté until tender.
Pour in chicken broth and thyme; simmer 15 minutes.
Stir in cream and Parmesan until melted.
Finish with fresh parsley; season with salt and pepper. Serve hot.
