1 lb ground chicken
1/4 cup grated Parmesan
1/4 cup breadcrumbs
1 egg
2 cloves garlic, minced
1 tsp Italian seasoning
Salt and pepper to taste
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
2 cups chicken broth
1/2 cup heavy cream
2 cups fresh spinach
1 cup orzo
Fresh parsley, for garnish
Mix chicken, Parmesan, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper. Shape into meatballs.
Brown meatballs in olive oil, set aside.
Sauté onion and garlic; add sun-dried tomatoes and broth. Simmer.
Stir in cream, spinach, orzo, and return meatballs. Cook 10-12 min.
Season to taste, garnish with parsley, serve warm.
