1 lb chicken breast, sliced
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
½ tsp salt
¼ tsp black pepper
2 bell peppers, sliced
1 red onion, sliced
1 zucchini, sliced
4 pita pockets
Herby ranch dressing
Preheat oven to 425°F (220°C). Line sheet pan with parchment.
Toss chicken in olive oil and seasonings.
Toss vegetables in olive oil, salt, and pepper. Arrange on sheet pan.
Roast 20 minutes or until chicken reaches 165°F and vegetables are tender.
Warm pita in last 5 minutes.
Assemble pitas with chicken, vegetables, and ranch. Serve.
