1 lb ground chicken
1/2 cup breadcrumbs
1/2 cup grated Parmesan
1 egg
1/4 cup milk
2 garlic cloves, minced
1/4 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley
1/4 cup ketchup
1 tablespoon honey or brown sugar
Preheat oven to 375°F (190°C) and grease a loaf pan.
Mix all meatloaf ingredients in a large bowl until just combined.
Shape into a loaf and place in pan.
Brush top with ketchup-honey glaze.
Bake 40–45 minutes or until internal temperature reaches 165°F (74°C).
Rest 5–10 minutes, slice, and serve.
Use fresh Parmesan for best flavor. Resting helps keep juices. Perfect for sandwiches the next day.
