Mouthwatering One Pot Lasagna Soup

Ingredients

  • 1 lb ground beef

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 3 garlic cloves, minced

  • 28 oz crushed tomatoes

  • 4 cups chicken broth

  • 8 oz lasagna noodles, broken

  • 1 tsp Italian seasoning

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 cup ricotta cheese

  • 1 cup shredded mozzarella

  • 1/4 cup grated Parmesan

  • Fresh basil for garnish

Instructions

  • Brown meat in olive oil; drain fat.

  • Add onion and garlic; cook until fragrant.

  • Stir in tomatoes, broth, and seasonings; bring to boil.

  • Add noodles; simmer until tender.

  • Mix in ricotta; sprinkle mozzarella and Parmesan.

  • Garnish with basil; serve hot.
