Italian Meatball Soup: Hearty, Easy, and Flavor-Packed

  • 1 lb ground beef

  • 1/2 lb ground pork

  • 1/2 cup breadcrumbs

  • 1/4 cup Parmesan, grated

  • 1 egg

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1/2 tsp pepper

  • 2 tbsp olive oil

  • 1 onion, diced

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 3 garlic cloves, minced

  • 6 cups chicken broth

  • 1 tsp Italian seasoning

  • 2 cups chopped spinach

  • Optional: 1 cup cooked small pasta

Instructions

  • Mix meatball ingredients and shape into 1-inch balls.

  • Brown meatballs in olive oil, then remove.

  • Sauté vegetables 5-6 minutes, add garlic 1 minute.

  • Pour in broth, Italian seasoning, salt, and pepper. Bring to boil.

  • Return meatballs, simmer 15-20 min, add spinach 2 min.

  • Optional: stir in cooked pasta. Adjust seasoning, serve hot.
