1 lb ground beef
1/2 lb ground pork
1/2 cup breadcrumbs
1/4 cup Parmesan, grated
1 egg
1 tsp garlic powder
1 tsp salt
1/2 tsp pepper
2 tbsp olive oil
1 onion, diced
2 carrots, chopped
2 celery stalks, chopped
3 garlic cloves, minced
6 cups chicken broth
1 tsp Italian seasoning
2 cups chopped spinach
Optional: 1 cup cooked small pasta
Mix meatball ingredients and shape into 1-inch balls.
Brown meatballs in olive oil, then remove.
Sauté vegetables 5-6 minutes, add garlic 1 minute.
Pour in broth, Italian seasoning, salt, and pepper. Bring to boil.
Return meatballs, simmer 15-20 min, add spinach 2 min.
Optional: stir in cooked pasta. Adjust seasoning, serve hot.
