2 cups cooked shredded chicken
3 cups mixed greens
1 red bell pepper, sliced
1/2 red onion, thinly sliced
1 cup cherry tomatoes, halved
1/2 cup provolone cheese, diced (optional)
1/4 cup sliced olives (optional)
3 tbsp olive oil
2 tbsp red wine vinegar
1 tsp Italian seasoning
Salt and pepper to taste
Shred chicken and chop vegetables.
Combine greens, peppers, onions, tomatoes, cheese, and olives.
Whisk together olive oil, vinegar, Italian seasoning, salt, and pepper.
Toss chicken and veggies with dressing. Serve immediately.
