Irish Chicken Whiskey: A Flavorful Twist on Comfort Food

  • 4 chicken thighs (or breasts)

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 1/2 cup Irish whiskey

  • 1 cup chicken broth

  • 1/2 cup heavy cream

  • 1 tsp fresh thyme

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions

  • Sear seasoned chicken in butter and oil, remove.

  • Sauté onion and garlic.

  • Deglaze with whiskey, scraping pan.

  • Add broth, cream, thyme; simmer.

  • Return chicken; simmer 15-20 minutes.

  • Adjust seasoning, garnish, and serve.

Notes

Thicker sauce by simmering longer, pair with mashed potatoes or rice.
