4 chicken thighs (or breasts)
2 tbsp butter
1 tbsp olive oil
1 onion, diced
3 garlic cloves, minced
1/2 cup Irish whiskey
1 cup chicken broth
1/2 cup heavy cream
1 tsp fresh thyme
Salt and pepper to taste
Fresh parsley for garnish
Sear seasoned chicken in butter and oil, remove.
Sauté onion and garlic.
Deglaze with whiskey, scraping pan.
Add broth, cream, thyme; simmer.
Return chicken; simmer 15-20 minutes.
Adjust seasoning, garnish, and serve.
Thicker sauce by simmering longer, pair with mashed potatoes or rice.
