1 lb carrots, peeled and cut
3 tbsp butter
2 tbsp honey
2 cloves garlic, minced
Salt and pepper to taste
Optional: fresh parsley or thyme
Preheat oven to 425°F (220°C).
Prepare carrots.
Melt butter with honey and garlic.
Toss carrots with glaze, salt, and pepper.
Roast 20-25 minutes, turning halfway.
Garnish with herbs and serve.
