Ingredients

Potatoes
Olive oil
Garlic powder
Dried oregano
Salt and pepper
Lemon juice
Feta cheese
Parsley

Instructions

Slice potatoes and soak in water.
Parboil for 7 minutes.
Season with olive oil, garlic, oregano, salt, pepper.
Bake at 425°F for 25–30 minutes.
Finish with lemon, feta, and parsley.
Serve warm.

Notes

Use block feta for best flavor.
