4 cups broccoli florets
1 small onion, chopped
2 garlic cloves, minced
2 cups chicken or vegetable broth
1/2 cup Greek yogurt
1/2 cup shredded cheddar cheese
1 tbsp olive oil
Salt and pepper to taste
Sauté onion and garlic in olive oil until soft.
Add broccoli and broth; simmer 8–10 minutes.
Blend half the broccoli for creaminess.
Stir in Greek yogurt and cheese; heat gently.
Season and serve with optional toppings.
