Garlic Slow Cooker Chicken Thighs

Ingredients

  • 46 chicken thighs, bone-in or boneless

  • 4 cloves garlic, minced

  • 1 cup chicken broth

  • 2 tbsp soy sauce

  • 1 tbsp lemon juice

  • 1 tsp thyme

  • 1 tsp rosemary

  • 12 tbsp olive oil (optional)

  • Salt and pepper to taste

  • Optional: 2 carrots, 2 potatoes, 1 onion, sliced

Instructions

  • Pat chicken dry and season with salt and pepper.

  • Optional: Sear in skillet 2-3 minutes per side.

  • Place chicken in slow cooker with garlic, herbs, broth, soy sauce, and lemon juice.

  • Add vegetables if using.

  • Cook LOW 4-6 hours or HIGH 2-3 hours until chicken reaches 165°F.

  • Taste and adjust seasoning; optionally reduce sauce for thickness.

  • Serve with sides, drizzle with sauce, enjoy!
