4–6 chicken thighs, bone-in or boneless
4 cloves garlic, minced
1 cup chicken broth
2 tbsp soy sauce
1 tbsp lemon juice
1 tsp thyme
1 tsp rosemary
1–2 tbsp olive oil (optional)
Salt and pepper to taste
Optional: 2 carrots, 2 potatoes, 1 onion, sliced
Pat chicken dry and season with salt and pepper.
Optional: Sear in skillet 2-3 minutes per side.
Place chicken in slow cooker with garlic, herbs, broth, soy sauce, and lemon juice.
Add vegetables if using.
Cook LOW 4-6 hours or HIGH 2-3 hours until chicken reaches 165°F.
Taste and adjust seasoning; optionally reduce sauce for thickness.
Serve with sides, drizzle with sauce, enjoy!
