2 cups diced chicken
2 large onions, thinly sliced
2 cloves garlic, minced
1 cup orzo pasta
2 cups chicken broth
1/2 cup Parmesan, grated
1/2 cup Gruyere or Swiss, shredded
2 tbsp butter
1 tbsp olive oil
Salt and pepper
Optional: fresh thyme or parsley
Caramelize onions in butter and oil, 15–20 minutes.
Sear chicken 3–4 minutes per side.
Add garlic and flour to onions; stir in broth and simmer 5 minutes.
Mix chicken, orzo, and onion sauce in baking dish. Stir in cheeses.
Cover and bake at 375°F for 20 minutes. Remove foil, top with more cheese, bake 10–15 minutes.
Garnish and serve hot.
