French Onion Chicken Orzo Casserole That Feels Like a Warm Hug

  • 2 cups diced chicken

  • 2 large onions, thinly sliced

  • 2 cloves garlic, minced

  • 1 cup orzo pasta

  • 2 cups chicken broth

  • 1/2 cup Parmesan, grated

  • 1/2 cup Gruyere or Swiss, shredded

  • 2 tbsp butter

  • 1 tbsp olive oil

  • Salt and pepper

  • Optional: fresh thyme or parsley

Instructions

  • Caramelize onions in butter and oil, 15–20 minutes.

  • Sear chicken 3–4 minutes per side.

  • Add garlic and flour to onions; stir in broth and simmer 5 minutes.

  • Mix chicken, orzo, and onion sauce in baking dish. Stir in cheeses.

  • Cover and bake at 375°F for 20 minutes. Remove foil, top with more cheese, bake 10–15 minutes.

  • Garnish and serve hot.
