  • 1 large onion, chopped

  • 2 tbsp butter or olive oil

  • 4 cups chicken or vegetable broth

  • ½ cup heavy cream or milk

  • 1 tsp thyme

  • Salt and pepper to taste

  • Optional toppings: croutons, grated cheese, fresh parsley

Instructions

  • Roast garlic at 400°F for 20 minutes until soft.

  • Caramelize onions in butter for 8–10 minutes.

  • Add roasted garlic, broth, thyme, salt, and pepper; simmer 10 minutes.

  • Blend until smooth.

  • Stir in cream and simmer 5 minutes. Serve with toppings.
