1 bulb garlic, roasted
1 large onion, chopped
2 tbsp butter or olive oil
4 cups chicken or vegetable broth
½ cup heavy cream or milk
1 tsp thyme
Salt and pepper to taste
Optional toppings: croutons, grated cheese, fresh parsley
Roast garlic at 400°F for 20 minutes until soft.
Caramelize onions in butter for 8–10 minutes.
Add roasted garlic, broth, thyme, salt, and pepper; simmer 10 minutes.
Blend until smooth.
Stir in cream and simmer 5 minutes. Serve with toppings.
