1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 can (10 oz) enchilada sauce
8–10 tortillas (flour or corn)
1 ½ cups shredded cheddar or Mexican blend cheese
1 tsp chili powder
1 tsp cumin
Salt & pepper to taste
Optional: black beans, corn, bell peppers, jalapeños
Preheat oven to 375°F. Grease baking dish.
Brown beef in skillet; add onion, garlic, and spices. Cook until fragrant.
Warm tortillas. Spoon beef mixture onto each tortilla, sprinkle with cheese, roll, and place in dish.
Pour enchilada sauce over and sprinkle remaining cheese.
Bake 20 minutes until bubbly. Garnish as desired.
