Easy Ground Beef Enchiladas: Quick, Cheesy, and Delicious

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 can (10 oz) enchilada sauce

  • 810 tortillas (flour or corn)

  • 1 ½ cups shredded cheddar or Mexican blend cheese

  • 1 tsp chili powder

  • 1 tsp cumin

  • Salt & pepper to taste

  • Optional: black beans, corn, bell peppers, jalapeños

Instructions

  • Preheat oven to 375°F. Grease baking dish.

  • Brown beef in skillet; add onion, garlic, and spices. Cook until fragrant.

  • Warm tortillas. Spoon beef mixture onto each tortilla, sprinkle with cheese, roll, and place in dish.

  • Pour enchilada sauce over and sprinkle remaining cheese.

  • Bake 20 minutes until bubbly. Garnish as desired.
