4 boneless, skinless chicken thighs or breasts
1 cup long-grain rice
1 1/2 cups chicken broth
1/2 cup tzatziki sauce
2 tbsp olive oil
2 cloves garlic, minced
Salt and pepper
2 tbsp chopped fresh dill or parsley
Optional: feta cheese, extra tzatziki
Preheat oven to 375°F. Grease baking dish.
Mix rice, chicken broth, tzatziki, garlic, oil, and herbs in dish.
Place chicken on top, season with salt and pepper.
Cover and bake 35 minutes. Check chicken reaches 165°F.
Optional: top with cheese or extra tzatziki. Bake 5–10 minutes uncovered.
Garnish and serve hot.
