2–3 chicken breasts
4 cups fresh spinach
4 oz cream cheese
1/2 cup heavy cream
1 1/2 cups shredded cheese (cheddar or mozzarella)
1 small onion, chopped
2 cloves garlic, minced
1/4 cup breadcrumbs (optional)
2 tbsp butter or olive oil
Salt and pepper to taste
Preheat oven to 375°F (190°C). Grease a baking dish.
Cook and shred chicken.
Sauté onion and garlic; add spinach until wilted.
Stir in cream cheese, heavy cream, and shredded cheese.
Mix chicken into sauce; pour into dish.
Top with cheese and breadcrumbs.
Bake 25-30 minutes until golden.
