Cozy Lemon Chicken & Rice Soup

Ingredients

  • 1 lb boneless chicken (breast or thighs)

  • 1 cup white rice

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 6 cups chicken broth

  • Juice and zest of 1 lemon

  • 2 tbsp olive oil

  • Fresh parsley, salt, pepper to taste

Instructions

  • Sauté onion, garlic, carrots, and celery in olive oil for 5-6 minutes.

  • Add chicken pieces and cook 4-5 minutes.

  • Stir in broth and rice, simmer covered 18-20 minutes.

  • Add lemon juice and zest, season to taste.

  • Garnish with parsley and serve warm.

Notes

Cook rice separately for freezer-friendly soup. Add extra veggies for a nutrient boost.
