1 lb boneless chicken (breast or thighs)
1 cup white rice
2 carrots, diced
2 celery stalks, diced
1 onion, diced
2 cloves garlic, minced
6 cups chicken broth
Juice and zest of 1 lemon
2 tbsp olive oil
Fresh parsley, salt, pepper to taste
Sauté onion, garlic, carrots, and celery in olive oil for 5-6 minutes.
Add chicken pieces and cook 4-5 minutes.
Stir in broth and rice, simmer covered 18-20 minutes.
Add lemon juice and zest, season to taste.
Garnish with parsley and serve warm.
