Comforting French Onion Pot Roast

Ingredients

  • 34 lb chuck roast

  • 4 large yellow onions, thinly sliced

  • 2 cups beef broth

  • 3 tbsp butter

  • 4 cloves garlic, minced

  • 2 tbsp Worcestershire sauce

  • 1 tsp thyme

  • 2 bay leaves

  • 2 tbsp flour

  • Salt and pepper, to taste

Instructions

  • Caramelize onions in butter over medium heat for 20–25 minutes.

  • Sear seasoned roast on all sides.

  • Layer onions and beef in Dutch oven.

  • Add broth, Worcestershire sauce, garlic, thyme, bay leaves. Sprinkle flour.

  • Cook at 325°F for 3–4 hours or slow cooker on low 6–8 hours.

  • Remove roast, thicken gravy if needed. Serve hot.
