3–4 lb chuck roast
4 large yellow onions, thinly sliced
2 cups beef broth
3 tbsp butter
4 cloves garlic, minced
2 tbsp Worcestershire sauce
1 tsp thyme
2 bay leaves
2 tbsp flour
Salt and pepper, to taste
Caramelize onions in butter over medium heat for 20–25 minutes.
Sear seasoned roast on all sides.
Layer onions and beef in Dutch oven.
Add broth, Worcestershire sauce, garlic, thyme, bay leaves. Sprinkle flour.
Cook at 325°F for 3–4 hours or slow cooker on low 6–8 hours.
Remove roast, thicken gravy if needed. Serve hot.
