1 tbsp oil
3–4 garlic cloves, minced
1 tbsp grated ginger
1 onion, diced
2 carrots, sliced
2 celery stalks, sliced
1 lb chicken breasts or thighs
6 cups chicken broth
1–2 tbsp soy sauce
6 oz egg noodles
Fresh parsley, cilantro, or green onions for garnish
Salt and pepper to taste
Sauté aromatics until fragrant.
Add chicken and sear lightly.
Pour in broth and simmer 15 minutes.
Shred chicken and return to pot.
Add noodles and cook until tender.
