4 cups diced potatoes
12 oz smoked sausage, sliced
1 onion, chopped
1 bell pepper, chopped
2 garlic cloves, minced
4 cups chicken broth
1 cup heavy cream or milk
2 tsp Cajun seasoning
Salt and pepper to taste
Optional toppings: shredded cheese, green onions, crumbled bacon
Sauté sausage until browned; remove.
Cook onion, bell pepper, and garlic until soft.
Add potatoes, broth, and Cajun seasoning; simmer 15 minutes.
Blend half for creaminess, leaving chunks.
Add cream and sausage; simmer 5 minutes. Serve with toppings.
