Bacon Cheddar Gnocchi Soup: Creamy Comfort in a Bowl

Ingredients

  • 1 lb potato gnocchi

  • 6 slices bacon, chopped

  • 1 medium onion, diced

  • 2 garlic cloves, minced

  • 3 tbsp flour

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 2 cups shredded cheddar cheese

  • Salt, pepper, paprika to taste

Instructions

  1. Cook bacon until crispy, drain, reserve fat.

  2. Sauté onion and garlic in bacon fat.

  3. Stir in flour, cook 1-2 min.

  4. Gradually add broth and cream, simmer.

  5. Add gnocchi, cook 3-5 min.

  6. Stir in cheese until smooth.

  7. Top with bacon and extra cheese. Serve warm.

Notes

Don’t overcook gnocchi. Adjust seasoning to taste. Add veggies if desired.
